These days, churches, community centres and all manner of faith-focused enterprises are classed as commercial catering establishments if they either cook or serve food. Consequently, they must abide by exactly the same rules and requirements that are applied to restaurants and pubs. So, as a ‘commercial kitchen’ there is clear government legislation that must be adhered to and, as a company that’s specialised in this area for many years, we’re here to guide you from the beginning to the end.

A KITCHEN IN A CHURCH?

Community-focused enterprises are increasingly commonly serving food, yet many are unaware that by serving any form of food and drink they are classed as commercial catering establishments. This means that commercial kitchen legislation must be observed. Community enterprises consist of church halls, or venues affiliated with any other religious denomination, community centres, village halls, charity groups, soup kitchens and so on.

It’s true that a well specified commercial kitchen within a local hub will help provide a warm welcome to your community and will enable you to reach out to the wider neighbourhood. BUT WHAT DOES COMMERCIAL KITCHEN MEAN?

It means that your existing kitchen with its old, wooden, domestic worktops and cupboards does not comply with the standards required in a commercial environment. To conform, all work surfaces must be made of high-grade stainless steel so that they’re easy to keep clean, while all underframes and shelving must be functional, but must also allow unobstructed access for cleaning.

Commercial appliances will be of a heavier duty than domestic equivalents too in order to withstand longer and more frequent use and should always be moveable for ease of cleaning and maintenance. Your walls, floors, ceilings and lighting will also be specified to fall in line with modern commercial hygiene standards.

COMMERCIAL ALSO MEANS SAFE

There are many reasons why church kitchens are classified as commercial. Most importantly, the rules that apply help ensure that a high level of safety and hygiene can be achieved and maintained both for those preparing food and those consuming it.

The good news is that much of what is required is very straightforward and, once explained, makes perfect sense. In fact, there are so many potential benefits to owning a functioning commercial kitchen, you will wonder why you didn’t do it before

This is because, whether you are refurbishing an old kitchen or building a new one, there will be essential preparation work to do prior to the kitchen being installed. Be assured that we will work alongside your team from beginning to end. So, whatever your budget and no matter if the available space is small or large, we can help.

A REAL TEAM EFFORT

A commercial kitchen installation is a collaborative effort. As the kitchen providers, our installation falls within the final stages of a carefully structured and sequenced programme of work that will be conducted by a variety of trades. There is no one-size-fits-all solution, as every client’s premises and needs are different, but below are the tradespeople you will most likely need to call upon.

ARCHITECT / STRUCTURAL ENGINEER

If you are building from scratch or making extensive structural alterations you may need to consult with an architect at your premises. On smaller projects, a building contractor and a structural engineer will suffice in lieu of an architect. If you are working within the confines of an existing space then you will not require the services of an architect.

GENERAL BUILDING CONTRACTOR

You will almost certainly require the skills of a building contractor to prepare the area ready for your new kitchen. If you do not have a local contractor in mind, speak to us and we will attempt to provide a recommendation. Your builder will be responsible for all construction work as well as wall, floor and ceiling finishes and the coordination of other key trades.

ELECTRICAL CONTRACTOR

A qualified electrician is a must. Your new kitchen will require a host of dedicated electrical points, each located with precision. Every appliance, fridge, toaster and gadget will require power and these each need careful coordination. Many reasonably-sized building contractors will offer the services of an affiliate electrician within their scope of works.

PLUMBING CONTRACTOR

Various aspects of your kitchen will require hot and cold water connections as well as reliable drainage points. A competent plumbing contractor is essential to prepare all pipework accurately in a manner which doesn’t impede the kitchen appliances. Again, most building contractor will have direct access to a plumber and will manage their works on your behalf.

GAS PLUMBING CONTRACTOR

Gas installations are very heavily regulated, so if your new kitchen is to include gas appliance(s) then a qualified, commercial Gas-Safe plumber must be contracted to ensure that every component, from the incoming supply and meter, all the way to the appliance connection pipework being properly installed. Many building contractors will have access to a suitable contractor.

VENTILATION SPECIALISTS

Commercial kitchens require adequate mechanical ventilation to maintain a safe and comfortable working environment for those who work (or volunteer) in them. This is another heavily-regulated area from which there is no hiding, especially so when gas appliances are to be installed. Luckily commercial ventilation is an area where we can provide you with a beginning-to-end solution as part of our package.

Commercial Kitchen Ventilation is a factor that many find daunting. When you cook food in a commercial space there is legislation regarding the sufficient removal of cooking fumes, and replacing those fumes with fresh, breathable air. Again, these are the same rules that apply to any restaurant or café.

However, although there is no hiding from the importance of good kitchen ventilation, the solutions can be surprisingly straightforward. One of our in-house kitchen ventilation specialists will be happy to attend your site and suggest most suitable solution for your specific circumstances.

THERE IS NO HIDING FROM THE IMPORTANCE OF GOOD KITCHEN VENTILATION, BUT SOLUTIONS CAN BE SURPRISINGLY STRAIGHTFORWARD.

WHAT YOU’LL NEED

You’ll be glad to hear that the majority of community project kitchens are never complicated in design or in use. The complex cooking methods found in restaurants do not normally apply to smaller, community enterprises, so kitchens are often based around just one or two versatile appliances. You can take for granted that a typical kitchen requires ample worktop space and plenty of shelving, but the following following tasks are what similar customers have agreed are the essentials:

COOK

A well specified 6-burner oven range will often cater for the majority of basic cooking requirements, particularly if a salamander grill is mounted at the rear for additional functionality. For higher volume cooking or to cater for a more expansive menu, a highly versatile combination oven could prove to be a great investment – but don’t worry – these highly dynamic appliances usually have very simple and easy to use controls.

REHEAT

You may not always cook from scratch. Food can sometimes be bought-in, or cooked elsewhere with the intention of simply reheating prior to serving. If this is your plan, there are many ranges of reheating solutions that we can talk you through, starting with the humble microwave (commercial duty of course!) through to powerful, aforementioned combination ovens with extraordinary cook and hold facilities.

WASH

What gets used must get cleaned. A well-planned wash-up station is a vital part of any kitchen. The centrepiece of this will be a commercial dishwashing machine – a very different beast to the machine you use at home. There is no company better equipped to help you with this because, as well as being installers of commercial kitchens, Nelson have also been manufacturing and installing commercial dish and glasswashing machines for nearly 50 years.

STORE

Storage in any kitchen is a vital commodity but when a facility has multiple uses and can be shared between a number of groups catering for many guests, then intelligent storage becomes lifeblood. We’ll outline the best possible configuration of refrigerated and ambient storage configured to suit your particular needs and maximising usability of the available space. And, if storage needs to be compartmentalised to hold ingredients and crockery for multiple users, we’ll suggest some clever solutions.
