All day menu with a focus on baked goods

Nelson Commercial Kitchens was brought in to design and install a kitchen for Perilla Bakery, a new retail outlet, prominently positioned in London’s Marylebone. We worked closely with consultant chef/pâtissier David Mendes (ex Savoy Hotel and Phil Howard’s The Square) to produce a highly versatile and very well specified kitchen suitable for all types of pastry work.

Time restrictions meant we had just three weeks to get the designs approved, source equipment and arrange installation and commissioning.The kitchen needed a dedicated coldroom to cope with the potentially large volume of chilled storage that was anticipated as well as further refrigeration in the kitchen itself.

To maximise space, we opted for a counter fridge and freezer so that the tops could be used as additional workspace. The remainder of the kitchen comprises a high performance, electronic dough sheeter, a combi oven, a proving cabinet and a wash up area where we installed one of our latest Advantage dishwashers.
