Cecconi’s Shoreditch, part of the iconic Soho House group, is located on the ground floor of the Redchurch Townhouse, a 37 bedroom boutique hotel. As its name suggests, Cecconi’s is an Italian themed restaurant and its doors are open all day, seven days a week, from 7.30 am right through until after midnight.
At the very beginning of the building project, Nelson Commercial Kitchens was called in to design and install a kitchen that would service the simple, yet highly refined Venetian-influenced menu that’s available for most of the week. However, the kitchen also needed to provide the food and accessibility for Cecconi’s Sunday Feast, a very popular weekly event that sees customers pay a set amount for unlimited quantities of buffet-style food – a high end take on the ‘all you can eat’ concept.
View GalleryPizza and pasta are staple items on the menu and a wood fired pizza oven dominates one corner of the kitchen to provide the necessary authenticity (image below). Next to this is a cookline comprising a charcoal grill, a plancha, 2 x pasta cookers, a solid top oven range, a salamander grill, 2 x fryers, an induction hob and 2 x stacked 6 grid combi ovens.
A further large zone is devoted to pizza and pasta preparation and includes an expansive marble worktop, 2 blast chillers, ingredients bins and a large spiral mixer.
Immediately in front of this are 2 preparation counters with inset sinks and thermowells and overhead heated gantries, while the space below is home to various undercounter fridges and freezers, some with drawers, allowing the many elements of the dishes to be stored in perfect condition.
The kitchen is designed to be aesthetically pleasing as well as practical as it’s on show to diners so the dishwash area is sited separately, completely out of sight, while a bespoke coldroom houses the majority of fresh foods.
