An exclusive Georgian venue set in the heart of the old Wessex countryside
We were successful amongst several companies asked to provide designs for a new kitchen for Holbrook House Hotel in Wincanton following a very serious fire which completely devastated the original one. The historic building dates back to Georgian times so a sympathetic approach was essential, and we were recommended because of our previous work within listed buildings.
We worked closely with the hotel’s owners, builders, service providers and insurers to advise on the best way forward in reinstating a working kitchen. Despite the sensitive nature of the project, speed was of the essence as, without a kitchen, the hotel was unable to function.
Because there was absolutely nothing of the original kitchen left, we were effectively starting with a blank canvas so we took the opportunity to focus on future requirements rather than attempting to recreate what had been there before.
The final design focuses on a large, centrally sited, Blue Seal Waldorf suite – one of the very first to be installed in the UK. It houses a twin fryer, chargrill, 2 x solid top ranges, a six-burner range and an auto-tilt bratt pan. To one end are 2 stacked 10 and 6 grid combi ovens as well as a 20-grid combi.
At the other end is the pass, complete with heated gantries and hot cupboards. Running along one side of the kitchen is the prep area which leads to a pastry station with its expanses of marble worktops, positioned within the coolest zone.
At the furthest extreme of the kitchen, we created a stills station with water boiler, coffee machine, fridge and toaster along with copious cupboard space and, next to that, is a dedicated wash up area. The bespoke warewash system is designed to prevent congestion with the use of pre and post wash tabling, shelves and racks, a prewash and a powerful, pass through dishwasher.
The finished design copes effortlessly with all the demands of a busy hotel from breakfast to dinner, snacks and room service to large functions and weddings.
