A highly innovative and very popular fast food concept

When James Breslaw and Roberto Marroni launched the first Neds Noodle Bar in 2000, the concept of serving noodles in a box was completely new. They anticipated high demand and needed to ensure that the kitchen could cope with a sizeable volume of orders which could be cooked and served very quickly.

Through recommendation, they found Nelson Commercial Kitchens and were impressed by their depth of knowledge and industry experience. James reflects, “Our dedicated Nelson project manager listened carefully to what we wanted to achieve and came up with a fantastic design that worked perfectly for the space we had available and which was also within budget. To enable us to achieve the high temperatures we needed, the equipment Nelson proposed was to a very high specification with serious heat output and fast recovery and this allowed us to function effortlessly from day one. We also knew we’d found a proven design formula that could be replicated.”

When James and Roberto expanded into more sites, they didn’t hesitate to call on Nelson again and each kitchen they’ve designed and installed for Neds has been a success. Of course, there have been improvements in equipment design over the years and Neds has embraced new concepts as they’ve become available, the most significant of which are the very powerful, yet incredibly energy efficient induction wok cookers they use now.

Neds most recent opening was in Oxford’s Westgate Centre as one of 6 food kiosks and once again Nelson was called in to help. As well as providing the kitchen, Nelson’s kitchen extraction and ventilation team came up with a clever solution to comply with the exacting clauses in the lease regarding environmental impact and provided James and Roberto with a high-functioning, super-green solution.
