Rola Wala is a grab and go concept inspired by combining recipes from across India with Mediterranean cooking techniques, using the best possible British produce and Indian spicing. Customers choose from sourdough naan, brown rice, masala noodles or cauliflower rice and then fill, or top, these from a wide selection of meat, vegetable or pulse dishes. As Danny Vilela, the company’s production and operations manager sums up, “Every single bite will deliver a delicious sweet, salty, sour, bitter and spicy flavour experience.”
Having previously worked with Rola Wala on the first London location, Nelson Commercial Kitchens was called in to create a system for the Oxford site to enable the most efficient means of preparing, cooking and serving the food. Everything is cooked from scratch daily so a workable kitchen was essential. However, arguably the most crucial part of the design was a large food counter that enabled customers to see the wealth of dishes on offer so they could make their choices easily and be served quickly.
